I guess there is no way to access the actual default paint schemes, aside from "void", is there? I've been wanting to use the "Paint Victory" util with the default skins to show my VF kill progress.

Never really thought about it.
Depending what you fly, there are a lot of good skins available in the Downloads section, no to mention several excellent skinners here who may be willing to help.
Do you have PSP, PhotoShop, or something equally as good? You might enjoy your own skinning as well.
Or perhaps you'd be happy using the "void" in winter missions.

I've done plenty of my own skins using Photoshop, I just figured it would be a helluva lot easier adding kills to a paint scheme already available. Motive=laziness...LOL.
